LESS FAT, MORE FILLING. The tiny portion of ordinary macaroni and cheese on the left contains 330 calories. So does the huge bowl of this comfort food made using an alternate recipe, at right. The latter was formulated by substituting whole-wheat pasta for regular, nonfat milk for whole, and low-fat cheese for regular. In addition, the lower-calorie recipe uses less butter and cheese and boosts its volume with spinach and tomatoes.
