CHOWING DOWN AND UP

Culturomics analyzes huge numbers of books (in this case nearly 6 million) to document cultural trends, such as changes in diet from 1800 to 2000. Steak (blue) and sausage (green) have long been favorites, measured by the frequency with which they appear in a given year. First, ice cream (red), and later, pizza (purple) and pasta (yellow) overtook those meats in popularity. Hamburgers (green-blue) caught on in the 1930s. Sushi (black) has recently shown signs of gaining fans. Credit: Image courtesy of Science/AAAS
